| Raw Food You may have been hearing a lot lately about raw foods, especially with so much talk of it in the media. Actresses like Demi Moore are sporting their youthful physique and crediting a raw food diet. This diet has peaked my interest in the last year or so and I decided to list a few resources and links that I've found helpful. Defined Raw foods, living foods, are those foods which have not been heated over 105 degrees F and have retained most if not all of its enzymes. Every chemical reaction in the body uses enzymes. They are essential for maintaining health. Some examples of raw foods would be uncooked fruit and vegetables, uncooked and unroasted nuts and seed, uncooked grain, and nuts or seeds that have been soaked and sprouted. Enzymes are still mostly retained when food is dehydrated or frozen. **All processed foods has been cooked, sterilized or pasteurized, which means all the enzymes that are needed to digest and utilize the food are destroyed.** Enzymes begin to be destroyed at 102 degrees, and they are totally dead at 126 degrees. Raw foods are closer to what nature intended.
