Chocolate Covered
Cherries
For this recipe, you
will need candy molds for
chocolate covered cherries. I
don't know how you could make
these without molds.
Ingredients
* Semisweet chocolate chips
(available from this website)
* Jar of marachino cherries
For Filling
* Marachino cherry juice
* 3 1/2 cups vegan powdered sugar
(mix unbleached cane sugar and
cornstarch)
* 1/3 cup hot water
* 1/3 cup corn syrup
Directions
Melt chocolate chips in double
boiler. Use a brush or small
spoon to coat the top and sides
of the candy mold with melted
chocolate, not too thick and not
too thin! Put molds in freezer
for at least 1/2 hour until the
chocolate sets up.
While you're waiting, mix the
sugar, water, corn syrup and some
cherry juice together until all
the sugar is blended well.
Remove the molds from the
freezer. Put some filling in each
hole, then a cherry, then more
filling. Now, add a
thin chocolate layer (which will
be the bottom of the cherry
chocolate). Use a knife to
flatten the bottom. Chill for
several hours in the
refrigerater.
Fondant
This can be used as
filling for any kind of chocolate
candy or as a topping for
cinnamon rolls, cakes, etc... Use
your imagination!
Ingredients:
* 3 1/2 cups vegan powdered sugar
(mix unbleached cane sugar and
cornstarch)
* 1/3 cup hot water
* 1/3 cup corn starch
* optional: to thicken add
arrowroot powder
Directions
Mix together well and use.
Variations
Add cocoa or fruit juice
Buckeyes
Real buckeyes are
nuts and are also associated with
the state of Ohio. These candy
buckeyes taste great and should
be a big hit with guests.
Ingredients:
* 1 1/2 cups peanut butter
* 6 cups vegan powdered sugar
(mix unbleached cane sugar and
cornstarch.
* 1 cup vegan margarine (Earth
Balance recommended)
* 1/2 teaspoon vanilla extract
* 4 cups semisweet chocolate
chips (Tropical Source available
from this website)
* toothpicks
* light corn syrup (optional)
Mix peanut butter, sugar, butter
and vanilla until you get a dry
dough. You may need to use your
hands. If the dough is too hard
to work with, add a little corn
syrup. Form into balls about 1
inch in diameter and place on a
non-stick cookie sheet. Stick a
toothpick in the top of each ball
and put in the freezer for 1/2
hour or more. Prior to taking
them out of the freezer, melt
the chocolate chips
in a double boiler (if you don't
have a double boiler, put water
in a large saucepan and put a
smaller saucepan in it with the
chocolate chips. Do not let the
water get in with the chocolate).
Stir constantly so the chocolate
doesn't burn or get grainy. Do
not let the chocolate get too hot
or it will become grainy!
Once the chocolate is melted dip
the balls into them leaving the
top uncoated. Don't worry if they
don't look perfect, they will
still taste good. Place buckeyes
in the refrigerater for at least
2 hours.
Vegan
'Cheeseball'
Ingredients:
* 1 tub of non-dairy cream cheese
(I like Tofutti french onion
cream cheese)
* worcestershire sauce (vegan
version available from this
website)
* green olives chopped and some
juice
* vegan 'ham' bits (available
from the Healthy
Eating Catalog)
* nutritional yeast
* chopped shallots
Directions
There are no exact amounts for
this recipe just use the cream
cheese as a base and add the
ingredients until it tastes good.
Shape into a ball or loaf and
sprinkle with additional 'ham'
bits. Let sit overnight for best
flavor. Serve on crackers for a
delicious treat! This recipe is
very popular with
non-vegans/vegetarians.

Raw Vegan Shake
1/4 cup almonds,
soaked
2 medjool dates, pits removed
1 ripe banana
1/4 cup water or more, depending
on your preference
This delicious shake
is so creamy and simple to make.
24 hours before making this shake
put 1/4 cup almonds in water to
soak. Take the soaked almonds,
pitted dates, banana and water
and blend in the blender until
smooth. You may add more water
depending on your thickness
preference.
Raw
Sunflower Seed Pate
1/2 cup sunflower
seeds and pumpkin seeds, soaked
12 hours
1 T Raw Almond
Butter
1 Teaspoon Nama Shoyu (raw soy
sauce)
1/4 cup water
1/4 of a white onion
Blend in food
processor until creamy
consistency is reached. Use as a
spread, pate, or dip.
